Lovely Lumieres!

Every bride has their own vision of how they want their centerpieces to look on the tables at their reception, but with this economy, cost can sometimes be an issue! Lumiere's are gorgeous and are a great way to bring a little glow to any room!

To complete this DIY project all you need is high melt paraffin wax (which you can find at any good craft store), party balloons, a double boiler, and a non-stick cookie sheet.

First you will fill your balloon with warm water.
Melt the wax. The best temperature for this to work is at 180 degrees Fahrenheit.
Slowly, you will dip your balloon into the wax to just below the water level in the balloon. (DO NOT dip the balloon past the water level, this could cause the balloon to pop.)
Hold the balloon in the hot wax for a few seconds, then slowly lift it out. Dip it a few more times allowing time in between each dip for the wax to cool. (Dipping more times will make it thicker.)
While the wax is still warm and you are able to mold it, set the balloon down on the cookie sheet making sure it is level. This will create a flat bottom for the Lumiere to set upright.
After the wax is completely cooler, hold the balloon over a sink or bucket facing away from you. Carefully pop the balloon and let the water drain out. Throw away all leftover balloon.
After this process, some of the wax may have chipped. To level out the top of the Lumiere, heat the cookie sheet and place the Lumiere top-down onto the hot sheet to carefully melt the edges until it is level.
After it's all finished, you can play a tea light or votive inside the Lumiere to give a room a nice glow!
**For additional colors, you can try mixing color into the wax!**

DIY Poms!

Looking for an easy way to add a pop of color to your wedding? Try creating these t-shirt pom poms and hang them off chairs at your ceremony or hang in bunches in your reception! All you need are a couple of colorful t-shirts that you don't wear anymore, some cardboard, and scissors!

First you will need to trace 2 difference size circles onto the cardboard to cut out. You can play around with the sizes of the 2 circles to get different size poms.

Now, cut your t-shirt into 1/2" strips. For the best results, cut from the armpit of the shirt and down.

Next take the strip of the shirt and place it around the inner part of the cardboard circle cutout. After you've placed your shirt, sandwich it by adding the other template on top!

Take another strip of t-shirt and begin winding it around the template. Be sure to stretch the material tightly so that it covers a lot of space! Once you reach the end of the strip, take another strip and be sure to overlap the end and continue winding around the template until you get all the way around!

Now take the sandwiched strip and pull tight and wrap around each other once. this will help hold things in place for the next step. With one hand holding the strips in place, use scissors to cut the fabric strips along the template.

After all of the strings are cut, pull the string tight and tie it into a knot. Remove the templates! You can spend the time now fluffing and cutting the pom to your liking!

At Events By Amore we are always trying to help our brides think of great creative ways to personalize their wedding! One department we love working in is helping to create the Save the Dates/RSVP cards!

Here are a couple of fun ideas to get your mind going!

This is a cute picture that you could send as a postcard with more information on the back. This photograph is very simple to create and each recipient will get that "awe" feeling!

To keep up with the times, this is a fun image to create! It seems everyone these days keeps track of important dates on their cell phones, so why not take advantage of that!

This image is simple to create and gives off an old-time feel! If this is close to the theme of your wedding, it's a great save the date option!

This save the date is inexpensive to have made and is a great souvenier! Also, as something cute, order one for you and your husband (mainly for your husband) so he will always have a little reminder of when your anniversary is coming up! ;)

Last, here is a fun RSVP card to include with your Save the Date! The idea is taken from the childhood MadLib books, but will give you many laughs as the RSVP's roll in! It is also a fun thing for your guests to complete as well!

Warm Up Your Guests With This DIY Favor!

At Events by Amore we are always thinking of fun, creative ideas for our brides to incorporate into their wedding! In this chilly winter weather, everyone loves a big cup of hot cocoa, so why not save some money on this cute DIY wedding favor?

The only materials you will need is a small glass jar with a cork top, a small funnel, a hot cocoa mix (or you personalize it and make your own mix), and cute ribbon and tags to match your decor!

If you've never made your own personalized hot cocoa mix you can search online for unique mixes. Add in a little extra sugar, peppermint or cinnamon to change up the flavor! After your mix is made, use the funnel to pour it into your jar!

Peppermint Cocoa

Now its time for the fun part! Pick out a fun ribbon and tag to match your decor to tie around the bottle top. With the tied ribbon, it almost looks like a cozy scarf around the bottle. Attach your tag to the ribbon and include a cute message on the tag such as, "Something Sweet For You" or "(Bride) and (Groom) Wish You Many Cozy Evenings This Season". This is a great chance to be creative! Make sure on your tag that you include whether the cocoa needs to be mixed with hot water or milk!

If you're not a fan of hot cocoa, you can always switch it up by pouring a chai tea mix or one of your favorite homemade spices you love to incorporate in your cooking! You could even pour a delicious brownie mix into the jar! Be creative!

Looking to have a holiday party coming up? Try some of these fun holiday games to use as icebreakers for the guests or just to liven up the party!

This first game is called Kiss it Relay:

Place a large bowl of Hersey's kisses on a table. Divide the party into two even teams and have them line up 10-15 feet away from the bowl of kisses. The first person in each line will be given two oversized oven mitts. When "go" is announced, they will run to the table and try to unwrap the Hershey kiss as fast as they can. After it is unwrapped, they bring it down to the next person in line, pop it in their mouth, and the line continues the relay!

The next game is called Oh Christmas Tree:

This game is for children and adults! As the host you will give each party guest a piece of green construction paper. When "go" is announced, they will have a designated amount of time to rip the construction paper behind their back into their best Christmas tree! Before they get a chance to look, give them holiday stickers to decorate their tree with. After every guest is finished, hang the up the tree's on your home tree and have everyone judge which is the best looking tree!

A final game is Sneaky Santa:

When your guests arrive at your house, have them put on a name tag. As the host, write a small letter in the corner of each tag in one of three colors. Add a small note on the back of the tag that instructs the guests to find their matching letters to make a holiday phrase. The first group to figure out their phrase and say it out loud, wins a party gift!

Fun Wedding Idea: Spin Wheel

If you're looking for something fun for you and your guests at your wedding, here's a great idea!

Party Wheels are something small and inexpensive that you can incorporate at your wedding. It is a spin wheel that has different actions such as "Bride and Groom Kiss", "Sing a Verse from a Love Song", "Do the Twist" and many more! There are companies that you can order these from, or you can be creative and make up your own actions! This is a great way to personlize your wedding for you and your guests.

A party wheel would be ideal for a smaller wedding, but if you feel up to the challenge it would be great to have at a large wedding for a night full of fun!

Don't Throw Away Tuesday!

If you've got an abundance of no-longer-serviceable socks lurking in your laundry baskets and drawers, these ideas are cheap and easy to do! You can make something as plain and ordinary as an orphan sock into so much more!

Option 1:

You can mix and match socks of different patterns and colors to slip over jars, glasses, or small flower pots. To get the desired look, you will snip off the bottoms of the socks and hot-glue the edges so the sock is pulled tight. After doing this, the object can stand flat on the table. These jars and pots would be ideal to fill with real or fake flowers!

Option 2:

To add a little edge to the common dining room chair, add a sock to the legs to match the decor of the desired room. Not only does this allow you to customize your chairs, but it will protect your wooden floors from scratches!

Table Numbers are a small detail to a wedding but can make a huge difference to your guests. One simple thing I love to suggest to brides that adds a very unique touch is to customize their table names instead of just using print work. Most guests love to see things that are personalized (handmade) by the bride and groom to be. Customzizing your table numbers can include asking friends or family for old picture frames that aren't being used. Paint the frames the colors you desire, borrow or buy fun fabric and wrap it around a piece of cardboard, and add wood painted 3D numbers. Here are some samples we LOVE!!!

This week we are featuring a company that we absolutely LOVE!!! Small fry society (sfs) and bun in the oven bunch (bob) offers socials for moms, babies and moms-to-be in the Tampa Bay area. Small fry society for mothers and babies begins September 21 and involves a six-week term of weekly 1.5 hour distinctively themed socials from food to fitness to fashion and more, plus a Girls' Night Out. Like small fry society, bun in the oven bunch, beginning October 11, offers a similar format of weekly socials, but they are geared towards the specific needs and wants of pregnant women.

The socials provide a venue for moms, babies and moms-to-be to meet new people, receive advice from experts in the community, and experience businesses’ products and services in a unique way—fun, hands-on, interactive, in an intimate setting, amongst old and new friends. My goal is to create a real sense of community – among mothers, their babies, mothers-to-be, the businesses supporting small fry society and bun inthe oven bunch, and the broader Tampa Bay area. An equally important aspect to sfs and bob is that they provide promotional opportunities to support local businesses’ marketing efforts to the growing family demographic.

Having an overarching theme to your wedding was passé for a little while there, but all-out themes are coming back. You’ll see wine lovers with cork & bottle décor and even wine tastings at the reception; seaside-themes with everything from shell decor to a seafood dinner. Embrace your theme and incorporate it into everything from your wedding invitations to your wedding favors. Just make sure it is YOU and your theme will work!

2012 WEDDING COLORS

There are lots of diverse options here. The bold color pairings of 2011 continue in 2012, such deep pink and sunny yellow. Neutrals and romance will make a comeback this in 2012, however, with choices that convey tranquility, such as beige and pale blue.

Victorian styles are an inspiration for the 2012 bridal season. Have you seen them popping up in bridal salons? They have long, full skirts paired with corsets, lace, chokers, and high collars – these are the details that you’ll see on runways in 2012.

My Husband and I love to cook together, some of our most memorable moments have been with family and friends in the kitchen, or across the dining table. We wanted to share with you a few of our favorite recipes for creating a special dinner you can prepare together or with friends. Perhaps you will give it a whirl this Valentines day and stay at home instead of fighting the hoards of crowds in the restaurants.

Bon Appetit, Patrick and Linda

Seared Sea Scallop, Lemon Thyme Pan Sauce

Yield: Makes 8 scallops (2 couples)
Ingredients:
• 1 lb. of large sea scallops about 8 to 10 per lb.
• 2 tabs. of unsalted butter
• 2 tabs of olive oil
• 1/4 of a shallot finely chopped
• 1/2 cup of dry white wine or vermouth
• 1/2 cup of fresh lemon juice
• 1/8 cup of fresh thyme leaves
• 1/8 teas of sea salt
• a pinch of cracked black pepper

Preparation:
Rinse sea scallop and put in a shallow dish with 1/2 the lemon juice, 1/4 cup. Allow to
rest in refrigerator for 20 minutes. Remove from lemon juice and pat dry, sprinkle lightly with salt and pepper. Heat 1 teaspoon oil in a 12-inch nonstick skillet over moderately high heat until hot but not smoking, then sear 4 to 5 scallops, turning once, until golden brown and just cooked through, 2 to 4 minutes total. Transfer to a platter as they finish and keep warm, loosely covered with foil. Sear remaining scallops in same manner, wiping out skillet and adding about 1 teaspoon oil between batches. Add 1 tabs of butter and cook the shallot over moderately low heat, stirring, until softened, about 3 minutes. Add wine and boil until liquid is reduced to about 1/4 cup, about 10 minutes.
Reduce heat to low and whisk in remaining cold butter a little at a time, lifting pan from heat occasionally to cool mixture (sauce should not get hot enough to separate). Whisk in thyme and lemon juice, then season with salt and pepper, and serve over the hot scallops

Chef Notes:
• This dish is best eaten warm, straight from the pan. Make this your last step
• Pairs beautifully with a crisp sparkling wine or a fruit forward Sauvignon Blanc

Chilled Pear Salad with Sherried Vinaigrette

Yield: Makes 4 servings
Ingredients:
• 2 ripe pears of your choice
• 1 head of bib lettuce, washed – drained and patted dry
• 1 head of red leaf lettuce, washed – drained and patted dry
• 1/2 shallot, chopped finely
• 2 cups of semi dry sherry
• 3 tabs of red wine vinegar
• 1 cup of vegetable oil like a canola or safflower
• 1 tabs of cracked black pepper
• 1/2 cup of coarse chopped walnuts
• 1/4 cup of gorgonzola cheese
• pinch of sea salt

Preparation:
Gently separate the heads of lettuce and combine, cover and place in the refrigerator.
Core and cut the pears into 1/4 inch thick slices, spray well with a non-stick cooking
spray and grill either on top of stove or on the BBQ, about 3 minutes per side. The pears should get grill marks and become soft ( but not mushy) with a light brown color.
Remove from heat and chill. In the meantime bring sherry and shallot to boil in heavy medium saucepan; reduce heat to medium-low and simmer until reduced to 1/2 cup, about 10 minutes. Strain into large bowl; cool. Whisk oil and vinegar into sherry. Season with salt and pepper. Add greens, cheese, walnuts, to bowl and toss to coat. Divide among plates, top with pears and serve.

Chef Notes:
• Reserve some of the vinaigrette to pour over the pears
• Gorgonzola is our favorite with this salad because of its creamy texture, and the way
it plays off the sweetness of the pears. You can substitute blue, goat or feta cheese if that is your preference.
• Pears can be grilled a day ahead and be kept in an air tight container in the
refrigerator, vinaigrette can be prepared ahead to the point of whisking in the oil and
vinegar.

Brandied Steaks with Mushrooms

Yield: 4 servings
Ingredients:
• 4. 6 ounce steaks of your choice, sirloin, tenderloin or rib eye
• 1 cup of demi glace
• 1 clove of fresh garlic,
• 1 cup of scallions chopped coarse
• 2 cups of sliced crimini mushrooms
• 1/2 cup of a good brandy
• 4 tabs of olive oil
• Pinch of sea salt
• Fresh ground black pepper to taste

Preparation:
Pound steak until about 1/4 to 1/2 inch thick, sprinkle generously with salt and pepper,then place in refrigerator.
Using a cast iron or stainless fry pan, heat olive oil to very hot but not smoking over non -electric burner. Once your pan has reached the desired temperature, add the beef and let it sizzle for 1 to 2 minutes to sear the meat, then flip and do the other side, continue until all 4 pieces are seared. Add the demi, sliced mushrooms and chopped onion, then let simmer about 4 minutes until mushrooms soften. Pour 1/2 cup of brandy into a stainless gravy boat and rest on the edge of the fire to warm it up.
Remove before it starts to sizzle or even ignite!
Tilt pan towards you, scraping down the liquids to create an “ignition zone” The pan will get hot and start to discolor, and that’s when you add the heated brandy to the hot zone! It will flame 2-3 feet high so be careful. Stir up the pan after the flame subsides. Plate the steaks , and pour over your brandy – mushroom demi glace

Demi Glace
We start with a great demi packaged like More Than Gourmet Demi-glace De Veau
Gold® French Veal Demi-glace, available online at www.amazon.com. Sauté the
remaining shallot with 1 – clove of garlic minced in butter until soft about 3 minutes. Add 2 cup of dry white wine, add the packed demi and cook until reduced by 1/2.

Chef Notes:
• If you prefer your steaks medium or better, sear initially for an additional 2 minutes per side.

Potato Hash
lifestyle recipe from catering by Amore

Yield: 4 servings
Ingredients:
• 3 tabs olive oil
• 4 small Yukon gold potatoes, peeled and cut into 1/4-inch dice (about 3 cup)
• 1/8 teaspoon kosher salt
• 2 tabs fresh chives, chopped
• Pinch of sea salt
• Fresh ground black pepper to taste

Preparation:
Prepare a medium heavy skillet over moderate heat by adding 3 tabs of olive oil, heat oil until hot but not smoking. Add potatoes and sauté, scraping up browned bits every few minutes, until tender and golden brown, about 15 minutes. Remove from heat, stir in
salt, pepper, and chives, and keep warm.

Tira Mi Su
lifestyle recipe from catering by Amore

Yield: 4 servings
Ingredients:
• 1- 16 ounce container of mascarpone cheese
• 1 egg yolk coddled
• 4 tabs very fine white sugar
• 1- package of savoiardi biscuits/cookies * available in most groceries or Italian
markets
• 3/4 cup of brewed espresso or a very strong coffee, chilled
• 1 cup of heavy whipping cream whipped
• 1 tsp of vanilla
• 2 tabs of amaretto or almond liquor

Preparation:
Over a very low flame beat egg yolk, sugar, and vanilla together stirring constantly until heated remove from heat and continue stirring until it has cooled. Add the mascarpone to the cooled egg mixture and whip until well blended, fold in the whipped cream and mix well, but do not beat. Set aside.
Select 4 ramekin about 4 ounces each for your desserts. Mix the liquor with the chilled
coffee, carefully breaking the cookies to the size you need to fit the dishes, (it doesnʼt have to be exact they will take the shape of the container) Dip the savoiardi into the coffee for 2 seconds and place into container getting a nice layer of the cookies, top with mascarpone mixture and continue layering until you have reached the top. Chill well at least 2 to 3 hours; even better if you can cover and do ahead the day before. Dust with unsweetened cocoa just before serving.

Chef Notes:
• Use almond, hazelnut or just about any other liquor they are all terrific in this dessert.

Are you having friends and family over to watch the Super Bowl this Sunday? Score big with these simple Super Bowl party planning recipes and tips.
The Super bowl in being played at the Dallas Cowboy Stadium, so lets' get cooking with some

Texas Style Dry Rubbed Wings.
Grab:
4 -lbs of chicken wings, both drumettes and wings
1- tabs chipotle powder
1- tabs granulated garlic, no salt added
1- tabs toasted cumin seeds
1- tabs smoked paprika powder
1- teaspoon of kosher or sea salt

Preparation:
Wash wings and clip pointy tips just slightly at the ends. Pat with a paper towel and move to the side to allow drying. Preheat oven to 500 degrees; mix all your spice in a bowl large enough to accommodate the wings.
Toss wings in dry rub spice until well coated, layout on a baking sheet that has been sprayed with a high temperature cooking spray. Bake for 15 minutes at this temperature, reduce heat to 350 and cook about another 20 minutes. Try putting these on a hot grill over an open flame turn frequently for the first 10 minutes until they get crisp, cover grill and move the wings to the side continue cooking an additional 15 minutes until finished.

Beer Cheese Fondue
Grab:
2 lb. block of Cheddar cheese, shredded
2 lb. block of Swiss cheese, shredded
1- 6 pack your favorite beer, dark beers work beautifully in this recipe
2- tabs cornstarch
2- cups low sodium Chicken Stock
1-head of cauliflower (blanched)
1- head of broccoli (blanched)
1-large loaf of sour dough bread, chunked

Preparation:
Blanch Vegetables in boiling salted water for 3 – 4 minutes, remove and place in ice water bath to stop the cooking process, chill and separated floret’s from the heads.
Bring 1-bottle of beer to boil, reduce heat to med-low, and slowly add in cheeses until all have been incorporated keep stirring. Combine chicken stock with cornstarch and mix well, add to hot cheese mixture a little at a time until desired consistency is reached. Fondue should be thick enough to cling to your vegetables and breads.

Pittsburg Black and Blue Burgers
(Pittsburg Rare is a term coined in cooking that is as old as the Steelers themselves.) When cooking steaks, burgers or anything Pittsburg Rare you sear/char the outside black quickly over a very high heat, which locks in the juices and leaves the center rare. Typically this method produces a crunchy outer layer a wonderful contract to the cool soft center.

Grab:
3 – lbs of lean ground Beef
6 – ounces of crumbled Blue cheese
3- tab chopped Italian flat leaf parsley
1-tabs course ground Black pepper

Preparation:
Combine all ingredients and mix well, Divide into 9 equal 6 - ounce portion, and hand form patties. Chill well and take straight from the fridge to a very hot grill.

Gasparilla is one of Linda Caivano-Baldwin's favorite times of year! As the owner of Amore - It's A Lifestyle in South Tampa, she has planned parties big and small for this fun day. Here are a few tricks of the trade from her that you can easily do at home!

1. Halloween decorations do double-duty when you use them again to create fun Gasparilla-inspired centerpieces. You can take a ceramic skull, add an inexpensive 3-cornered felt hat, and then surround the skull with some beads and coins.

2. For another Florida touch, pop a little floral foam inside the ceramic piece and add a few flowers. Will there be children at your party? Weave some gummy worms in and out of the mouth and add chocolate coins for a sweet treat.

3. If you are feeling a bit more industrious, stop by Home Depot or Lowe’s and grab a piece of plywood, dark brown stain and a few door hinges. Stain the board, attach the door hinges and place the finished piece over your buffet table, and you have an instant pirate- themed buffet.

4. Use plastic pirate chests to hold cocktail napkins and disposable utensils.

5. Drape Jolly Roger flags over the tables and hang fishing net from the ceiling.

The 5 Most Important Lessons to Learn about Cooking Food that will Keep you on your Diet

1. That what you cook is not nearly as important as how you do it! If you dust a chicken breast with some spices and either boil - broil or cook it in a pan on medium heat, it's going to taste yuck!. Take that same chicken breast and rub it with fresh herbs, lemon, garlic and then cook it at high heat on the stove top, and you'll seal in the flavors and bring out the spices, now you will end up with a dish that tastes entirely different and is very enjoyable.

2. Don't make the mistake of squishing your burgers with the intention of pushing out the fat, what you are really doing is drying out your meat and taking out all of the flavor and juice. Buy extra-lean instead of lean meat it makes all the difference.

3. Experiment making your own salad dressings, substitute low-fat or fat - free plain yogurt or Greek yogurt for mayo, or buttermilk in the recipe.

The trick is to strain it through a fine mesh colander or
drain it overnight, which allows all the liquids to be removed. That gives you a higher concentrate of flavor in the yogurt and it will be a better binder. Add in finely chopped fresh parsley, garlic, onion, green peppers and a pinch of cayenne pepper , let the flavors blend for 2 hours in the fridge. The result is a thicker, full-bodied delicious alternative to a higher calorie dressing.

4. STOP thinking " no - fat" and start thinking "smart fat" "No-fat cooking tastes terrible, but if you exchange the bad saturated fats for healthy (good) monounsaturated fats, everything will taste better, you will be eating a whole lot better and be much less likely to cheat!

5. Relatively inexpensive but healthy kitchen essentials you should have on hand to guide you on your path, are a food scale (so you know how big your portions really are); an olive oil sprayer, to add flavor with minimum calories; and a mallet to tenderize low-fat (lean cuts) of meats.

Trying to shed some holiday meal pounds? Dieting doesn't have to be bland. Try these tips for healthy, yet entertaining, meals.

It's a problem many of us face: How do you lose those extra pounds you put on during the holidays?

The scrumptious meal at Thanksgiving is quickly followed by holiday parties, cookie swaps, pie-baking, Hanukkah celebrations, Christmas feasts, New Year's Eve buffets and New Year's Day football parties.

Now it's the New Year, and that brings with it new resolutions to look and feel your best. Dieting doesn't have to mean eating only broiled chicken and salad. When I wanted to lose weight – and lose inches – I started eating clean. Here's what you do:

* Combine lean proteins and complex carbs at every meal
* Avoid salt, sugar, white rice and white flour
* Avoid saturated and trans fats
* Avoid soda and other sugary drinks
* Eat proper portion sizes
* Drink 8 cups of water per day

I know it can sound daunting, but you can make ultra-healthy food that tastes good. Here are some of my favorite recipes that are full of flavor, but are low-calorie, low-carb, and sodium and gluten-free:

* Instead of a typical meat lasagna with ricotta, mozzarella and parmesan cheese, make a hearty, healthy lasagna by layering eggplant, ground up chicken that's seasoned with oregano, parsley, basil, thyme and fennel, with a tomato/basil sauce and a little cottage cheese to hold it all together. It's 190 calories for an 8-ounce piece.

* Instead of making traditional chiles rellenos, which are typically peppers stuffed with cheese and meat and then breaded and deep-fried, make a filling out of spinach and chicken with just a half-ounce of queso cheese to hold it all together, and then roast it. Calorie count: 147

* Skip a piece of plain chicken and instead make Orange Basil Chicken. Just puree the whole orange, add fresh basil and a little garlic and marinate it for 30 to 45 minutes, then bake it, basting it with the marinade every so often to give it even more flavor. There's no need for any oil or salt.

Thinking of hosting a New Years Eve cocktail party?
The gifts are unwrapped, and the last of the roast pork sandwiches are officially gone. Are you feeling a little let down, well don’t! Instead invite some close friends over to celebrate and toast to good fortunes in your future.

The party should start a few hours before midnight; around 9:30 or 10:00 pm is a good idea.

The tips below will help you throw one last bash, and create the perfect atmosphere for your soiree.

A cocktail party, especially one with a New Year’s theme, is meant for mingling, and nibbling on delicious morsels of food.

You will need some sort of bar to hold your bottles, glasses and food. Consider moving a low cabinet over to the side of the room and out of the way.
Maybe you don't bother with a full bar, but instead do just sparkling wine!

Decorating tips
• End tables placed in the corners of the room can house snacks and things that are easily picked up.

Rearrange furniture into “conversation clusters” so that the couch is freed from the wall and placed in the middle of the room, two wing chairs are grouped in another area and a couple of floor cushions are placed in a corner for more intimate conversations.
• A few white paper lanterns can give your space a festive touch without looking over the top, check out Pier One for this item, they have tons and they are very inexpensive.
• .
• Pick up a light dimmer from your local hardware store for the party room. Turn the main light down a bit and place floor lights, replaced with low wattage bulbs on the peripheral of the space. Start the evening with brighter lights when everyone is getting to know each other, going darker the closer you get to midnight.
• Noisemakers and party hats, “New Year’s Eve wouldn’t be complete without them.” Go for a chic approach and choose hats and noisemakers in similar colors to match your room’s décor place them everywhere even on your buffet

recipe of the month: potato-crusted black cod with roasted vegetables

pairs well with sauvignon blanc, chateau st. jean sonoma county, california 2006

prep time: 25 minutes

cook time: 12 minutes

serves; 4 guests

ingredients:

2 lbs-atlantic black cod, available fresh market, cod seafood and publix’s greenwise
3 tabs- olive oil
4-roma tomatoes
13 leeks, white portion only
12 baby new potatoes
2- Idaho potatoes
2 – ounces of unsalted butter
salt and pepper

preparation:

peel, quarter and boil Idaho potatoes in 2 quarts of salted water until soft about 12 minutes, drain and mash with 2 ounces of butter, set aside and cool,

spread chilled potato on 4 pieces of plastic wrap, salt and pepper cod filet place fish on top of potatoes wrap tightly then chill for 20 minutes.

pre heat oven to 350 degrees toss, new potatoes, with roma tomatoes and leeks, season with 2 tablespoons of extra virgin olive oil, thyme, rosemary, salt and pepper roast for 20 minutes. remove c

od from refrigerator unwrap carefully heat remaining olive oil to medium high heat cod potato side down for 2 to 3 minutes to brown and seal the crust, turn each piece over potato side up into a baking dish put in oven with roasted vegetables and finish by baking in oven for 8 minutes, serve over roasted vegetables.

growing up, no meat fridays were a part of life, but when I married a non -catholic that all changed. my husband is use to eating whatever he wants during lent, like many of our clients planning a wedding, special event, luncheon or cocktail party during this season we must be sensitive to all our guests.

so how do we please our meat-eating guests?

first of all it’s okay to serve meat as an option, you just ne ed to include some fun non-meat options as well. being responsive to your guests needs would include not serving the meatless and meat hors d’ oeuvres on the same tray or placing side by side in chaffers, the same way we would service our kosher clients specific requirements. for more information on meatless menus, kosher catering and kasharut (the set of Jewish dietary law)

fabulous cocktails: are inspired by the winter

Olympics

gold cocktail

2 1/2 oz stolichnaya elit vodka
1 1/2 oz malibu coconut rum
1 tsp shredded coconut
garnish: coconut flakes
edible gold powder (available at cake decorating outlets such as michael’s or at cakes plus on south dale mabry hwy.)

coat bottom of martini glass with gold powder.
combine remaining ingredients into a shaker with ice.
shake well.
strain into gold-coated martini glass. The gold powder should float to the top.
sprinkle extra powder to deepen color
garnish with coconut flakes.

silver cocktail

2 oz malibu rum
2 oz canned lychee fruit puree
splash of fresh lime juice
edible silver powder (available at www.cakesplustampa.com/cake decorating outlets)
garnish: lime wedge

1. coat bottom of martini glass with silver powder. (available at /cake decorating outlets such as michael’s or locally at cakes plus on south dale mabry hwy.)

2. combine remaining ingredients into a shaker with ice.

3. shake well.

4. strain into silver-coated martini glass. The silver powder should float to the top.

5. sprinkle extra powder to deepen color.

6. garnish with lime wedge.

bronze cocktail

o 1 1/2 oz kahlua

o 2 oz monte cristo rum

o 1/2 oz grand marnier

o edible bronze powder (available at /cake decorating outlets such as michael’s or locally at cakes plus on south dale mabry hwy.)

o garnish: coffee beans

1. coat bottom of martini glass with bronze powder.

2. combine remaining ingredients into a shaker with ice.

3. shake well.

4. strain into bronze-coated martini glass. The bronze powder should float to the top.

5. sprinkle extra powder to deepen color.

6. garnish with coffee beans.

Recipe of the Month:
balsamic - herb lamb chops

prep time: 15 minutes
cook time: 10 minutes
serves; 4 guests
ingredients:
12 lamb rib chops
1/2 cup olive oil
1/4 cup balsamic vinegar
2 cloves garlic, minced
1 tablespoon of fresh rosemary, chopped
1 tablespoon of honey
2 teaspoons of dijon mustard
1 teaspoon of dried oregano
salt and pepper
preparation:
place lamb chops in shallot baking dish. combine olive oil, balsamic vinegar, rosemary, honey, mustard , oregano, salt and pepper and pour over chops. toss to coat, cover and refrigerate for 1 hour. pre heat grill 30 minutes into marination, grill chops over medium - high heat 3 minutes per side for rare and 5 minutes per side for medium.

ginger and prosecco martini

ginger syrup
1/2 c. sugar
1/2 c. water
2 small pieces of ginger peeled
boil sugar, water and ginger together until it glazes the back of a spoon, cool

yield : 1 cocktail
fill martini shaker with 1 ounce of 360 vodka (an eco friendly product), 1 ounce of fresh lime juice , 2 ounces of ginger syrup , shake well, pour into 7 ounce martini coupe and top with prosecco

for one of the prettiest cocktails you have ever seen!
